“cocktail” madeleines with ham and olives


2 eggs
90 g (3/4 cup) flour
4g dry yeast
3 tbsp vegetable oil (sunflower, peanut)
1/2 slice ham, diced
1 tbsp green olives, chopped
20g (2 tbsp) grated gruyere cheese


Preheat the oven to 180°C /355°F
Butter and flour the madeleine mould.
In a bowl, mix together the flour, yeast, and eggs with a wooden spoon.
Add the oil, cheese, ham and olives, and combine evenly.
Fill the Naturels mould with the help of a piping bag or a spoon, making sure not to overflow (fill about 3/4 full).
Bake the madeleines in the oven for 10 to 15 minutes.
Take them out of the oven, and upon placing them on the table say “I made them!”
For variety, here are a few ideas to replace the ham, olives and gruyere: sundried tomatoes, mozzarella, parsley and goat cheese; canned tuna or shrimp with cilantro; chives and lardons.
