Sweet Strawberry Butter


2 teaspoons of light brown sugar
1/2 teaspoon sea salt
1/4 cup of strawberry jam


Mash or stir 1 stick unsalted  softened butter at room temperature until it is smooth and slightly fluffy.  Add 2 teaspoons of light brown sugar, ½ teaspoon sea salt, ¼ cup of strawberry jam and the Zest of a half of a small lemon until smooth.  Mix together, mashing with the back of a fork to make sure all the ingredients are incorporated.   Add Amaretto and mix well.  Taste for seasoning.   

On a piece of parchment or plastic wrap, drop butter in spoonfuls to form a log.  Roll butter in plastic wrap and smooth out to form a round log.  Refrigerate until hard and easy to cut into pieces.  Can be made in advance and stored tightly covered in the refrigerator for up to a week and in the freezer for up to 3 months. 

Makes 1 log, ½ cup

Suggestions:  grilled fruit, spread for rolls, cornbread, waffles and pancakes
